Head Chef (Indian Cuisine)

Job Description

We are seeking an experienced, passionate, and dedicated Head Chef to lead the kitchen operations of our authentic Indian restaurant. The successful candidate will be responsible for overseeing all aspects of food preparation, maintaining the highest standards of quality, hygiene, and consistency, while leading and developing the kitchen team.

Key Responsibilities

  • Lead and manage the daily operations of the kitchen.

  • Prepare and cook authentic North Indian and South Indian dishes, ensuring consistency in taste, quality, and presentation.

  • Develop, review, and improve menu offerings in collaboration with management.

  • Create seasonal and special promotional menus where appropriate.

  • Supervise, train, and mentor chefs, cooks, and kitchen assistants.

  • Plan daily food production and allocate kitchen duties efficiently.

  • Ensure all dishes are prepared according to established recipes and restaurant standards.

  • Monitor food quality, freshness, and portion control.

  • Maintain strict food safety, hygiene, and sanitation standards in compliance with Singapore regulations.

  • Manage food inventory, stock rotation, and storage to minimise wastage and control food costs.

  • Order, inspect, and receive food supplies and kitchen ingredients.

  • Ensure kitchen equipment is properly maintained and report any repairs required.

  • Work closely with management to achieve operational efficiency, customer satisfaction, and profitability.

  • Ensure compliance with workplace safety procedures and company policies.

Requirements

  • Minimum 5 years of experience as a Head Chef or Senior Chef in an authentic Indian restaurant.

  • Strong knowledge of Indian cuisine, including tandoor, curries, biryani, vegetarian dishes, breads, gravies, and traditional spice blends.

  • Experience in menu planning and recipe development.

  • Ability to manage kitchen operations independently.

  • Strong leadership and team management skills.

  • Good knowledge of food hygiene and food safety standards.

  • Ability to work efficiently under pressure in a fast-paced environment.

  • Positive attitude, reliable, disciplined, and committed to delivering high-quality food.

Preferred Qualifications

  • Food Safety certification is an advantage.

  • Experience working in Singapore or other international restaurant environments is preferred.

  • Familiarity with inventory management and food cost control.

  • Ability to communicate effectively in English. Knowledge of Hindi, Tamil, Punjabi, or other Indian languages is an advantage.
