Support the Central Kitchen Manager to lead the production unit to meet assigned production targets within quality requirement and assist in inventory management and the implementation of new production processes as required
Responsibilities
- Production Operations
- Monitor daily productions levels to ensure output meets the daily quota
- Oversee inventory levels of all ingredients and rebalance inventory regularly
- Serves as an escalation point for those below to resolve complex and diverse operational problems
- Escalate problems as necessary to the Head of Department
- Convert recipes into production steps and procedures
- Work with Procurement to secure necessary raw materials and ingredients
- Production Administration
- Produce reports related to production as required
- Coordinate with Procurement to order necessary materials for production activities
- Translate recipes and documents from Japanese to English
- Quality Assurance & Control
- Manage quality control activities in line with quality assurance standards and procedures
- Monitor compliance to SOPs, safety regulations and policies and to report to VP pertaining to any cases of non-compliance
- Determine corrective actions to resolve unsafe and/or non-compliant conditions and behaviors
- Conduct routine checks on cleanliness and condition of CNK facilities and equipment
- Partner with other departments in scheduled inspections of equipment and with QA to ensure safety and quality of raw materials and products
- Monitor 5S housekeeping methodology and ISO 22000 food safety standards
- People Management
- Oversee and guide staff in the assigned unit within the department
- Plan the schedule for team leaves and the duty roster
- Coordinate efforts with other departments to ensure smooth operations within the unit/ department
- Facilitate cross-deployment of staff
- Motivate staff to meet production quotas
- Conduct staff training for new staff and current staff so as to assist them to perform better
