Scope and Purpose
The main purpose of the Kitchen Crew is to oversee the operation in the B.O.H section and to ensure that all the section is prepared for the operation and all orders are delivered as per set standards and in proper presentation and display.
Related Duties and Responsibilities
Supervises the preparation and production of all pastry products.
Monitors the receiving of ingredients and other supplies from suppliers/storekeeper as required for daily operations.
Follows Head Barista/Ops Manager instructions and works on implementation.
Monitors the cleaning and disinfection of work areas, utensils and equipment.
Maintains the proper functioning of the chocolate fountains, crepe &
waffle machines, blenders, coffee machine, chillers and freezers.
Detects and ensures disposition of spoiled or unattractive food,
defective supplies/equipment, and/or other unusual conditions.
Follows up and executes production sheets and other records as
required with the coordination of the Floor Supervisor and the Floor
Manager.
Monitors and control products shelf life and prevents product
expiration.
Ready to cover in special circumstances (emergency absenteeism of
any team members).
Ensures compliance with company’s policies and procedures.
Ensure compliance with the Step-by-Step Book, preparation and
cooking methods.
Makes sure commitment in recipes and kitchen charts as well as the
portioning details.
Communicates with his Line Manager and follows up on all production matters.
Prepares orders for the Central Kitchen and makes sure commitment in
PAR LEVEL and follows up receiving of products as requested.
Reports regularly to his Line Manager with all B.O.H gaps like item
shortage and emergency cases.
Reports regularly with maintenance matters to his Line Manager.
Tracks, controls wastes and works on reduction.
Assists in handling the daily inventory items as well as the monthly.
Performs other related duties as assigned.
Communication & Working Relationships
Communicates professionally with all team members and Line
Manager while keeping a productive working environment.
Communicates with the stewards while keeping a healthy and clean
environment.
